Chili
Rellenos
recipe
by: My
Two Cents Worth
Ingredients:
-
Six to eight eggs depending on size
-
mild chili peppers canned or fresh
-
2 cups shredded Monterey cheese
-
1/2 cup Sharp Cheddar cheese
-
1teas. Mrs. Dashes Hot and Spicey seasoning
-
1/4 cup cream
Mix
eggs, cream, and seasonings together and set aside. Grease a pie
pan, then place 3/4 cup of Monterey cheese evenly in pan. Layer
your chilis then cover with the other 3/4 cup Monterey cheese. Sprinkle
the cheddar cheese over this mixture then pour the egg/cream mixture
over all. Carefully place this in 300 degree over and bake till
firm and starting to brown on top. Remove and slice into wedges
and serve with tomato and cucumber slices to have a CM breakfast
worthy of a fancy Sunday breakfast or for guests! My son-inlaw who
originally was very dubious and said "What's that?" loved
it and went back for seconds!
