Serves 12
- 1 Cup Water
- 1 envelope Knox® unflavored gelatin
- 16 ounces cream cheese -- softened & cubed
- 3/4 cup granular sugar substitute*
- 1 teaspoon vanilla extract
- 2 tablespoons instant sugar-free pudding mix -- any flavor
Sprinkle gelatin over water. Let stand 2 minutes. Microwave mixture on high for 40 seconds. Stir. Let stand additional 2 minutes. Add cream cheese cubes and stir until softened. Blend well with mixer. Add sugar substitute, vanilla, and pudding mix. Pour into 8" pie pan or 12 lined muffin tins. Chill about 2 hours or until firm.
* Some sugar substitutes are not recommended during pregnancy because of possible birth defects. Consult with your physician concerning approved substitutes and amounts that are considered safe.
