I haven't tried this recipe so I can't guarantee it is what you are looking for but it looks pretty simple. All the low carb caramel items I have tried (including steel's caramel sauce) reminds me of butterscotch Let me know if you try it and how it comes out.
Caramel (from Lori, on the DLC Low-carb Recipe List)
2 cups heavy cream ½ cup splenda 2 tsp vanilla
Place in a small saucepan and cook and stir over medium heat until mixture becomes very thick and begins to separate - about an hour. Pour into an 8" square dish and refrigerate. Cut into pieces. These aren't chewy like traditional caramels, but the flavor is tremendous. They taste like rich caramel but melt in the mouth like butter.
