Hello. I'm finding it difficult to stick to Atkins with my current job. I work for 14 hours straight on the road 4 times a week. On my days off I can eat the right things with no problem, but on the road, I can have an Atkins breakfast okay, and maybe a salad, but anything else in the day would be straight from a cooler (no microwave). So I'm limited on what I can eat. I've only been able to come up with sugar-free deli meats & jello. After a while that got hard to eat while passing by endless fast food restaurants! I'm hoping to get some suggestions. Thank You.

OK...so you have a cooler but no way to heat up food.
How about...
homemade chicken salad wraps (these can be prepared on the weekend by boiling chicken breasts, chopping in food processor with mayo, celery, spices, etc.) There are a few different low-carb tortillas out there (I prefer LaTortilla) and they are great with chicken salad and lettuce. There's also Atkins bread...so if you don't like wraps or would rather the bread texture, you can have it.
Are you a fan of cheese? There are some great specialty cheeses which keep in a cooler. I prefer the cheddar that has pepperoni shavings in it.. it's very filling! My local StopNShop Grocery has it in the specialty cheese area... it's delicious.
Celery with cream cheese, Spanish Devilled Eggs (although you may smell them through the cooler...hehehe) and slim jims are snack ideas.
If I think of other stuff, I'll post. Hope this helps a little.
