I don't have a granola bar recipe but my coworkers have gone bonkers for my granola.....they mix it with yogurt.......
About 3 cups rolled oats and one cup of slivered almonds. Now I'll admit I did use regular dark brown sugar, about a half cup loose, not packed, and some Splenda (about 2 tablespoons) which I melted into a stick of butter on the stove. I can not find a brown sugar substitute around here but there is so little per serving I think it should be OK.
Mix the butter into the oats (do this by using your hands so the entire thing is coated)spread out on a cookie sheet and bake at 350. Check at 15 minutes and stir. Let it go another 5 minutes and cool completely before mixing in dried fruit.

You can buy a brown sugar substitute at http://www.netrition.com/steels_sweeteners_page.html I was given a box of products from this website by my mother for Christmas and have yet to try it. She got it for me because she uses it herself. In the arena of low carb, she is my guru. Now the crystals are maltitol, so you'd want to go easy or things will get interesting.
