Thanks to Dorito's EDGE (the low-carb version of my favorite chip,) I can have Nachos again and ENJOY THEM!
Obviously nachos are the type of snack that you can pile high with your favorite ingredients. I have a thing for green olives, so that's what I use - but feel free to use all the other great toppings like jalapenos, mozzarella, black olives, sour cream, and more. I choose Frank's hot sauce - it's the one places like Ruby Tuesday's, Applebee's, and TGIF use. I love the taste of it and it's not too fiery.
Here's my version:
- Cover large plate with 28 Dorito's Edge chips (6g carbs per 14 chips) - Top with sharp cheddar cheese, spanish olives, and Frank's hot sauce, to taste. - Microwave for 1.5 minutes or until cheese gets thin and dry looking. (Or less if you like it more gooey.)
Enjoy!

It's hard to find them here too.........some of my supermarkets seem to have eased off on the stuff we like. I'm having a devil of a time finding the whole wheat hamburger rolls I used to get.

Nope, no SuperWalMarts here on Long Island......Stop and Shop has the whole wheat rolls occassionally but have never seen the hot dog whole wheats. I may just have to make them but in the meantime I've been using whole wheat pita bread.
