Several years ago I sampled some "Ice Cream" made with creamer as one of the ingredients in it. It was really good! Is anyone aware of a recipe or similiar idea? Most of the ice creams would cost so much to make they would frustrate my frugal soul>

Do you mean something like the liquid Coffee-Mate? If so, I wouldn't use them. Too much of the stuff we try to avoid (hydrogentated oils, corn syrup, etc).

where did you sample this item? At a low-carb grocery, a restaurant, someone's house? I never heard of this ice cream. I do know Carbolite (out of business now,) used to have an ice cream mix which you used heavy cream to make. But I've never seen a "creamer" version.

The place I listed for shopping in NY still carries Carbolite products.....if you google Carbolite there is a link that takes you to healthsmartfoods.com. One of the products is a soft serve mix and when you go to it, it says that it's Carbolite then Carborite. Could it be the same thing?
