My biggest downfall the five times I've started this diet has been rice and potatoes. They are my weakness. A friend of gave me a little trick of using steamed califlour in place of both. I've mashed up my califlour and smothered it with sour cream and butter. MMMMMMmmmmmmm. And then I whipped up this recipe using the califlour in place of rice. Believe me, I like it better than the original. Rice gives you that bloated, sleepy feeling. Califlour doesn't do that. Enjoy.
Chicken Stir-Fry (no rice)
1 boneless chicken breast, diced 1/2 large Vidalia onion chopped (they are sweeter) 1 green pepper chopped 1/2 cup carrots julienne (slice about the size of matchsticks) ½ cup bean sprouts (I love them but you don't have to add them.) 1 cup broccoli spears (or more if you like) 2 chicken bouillon cubes 1/2 cup water soy sauce 2-3 tbspns butter or margarine 1/2 head of cauliflower
Boil broccoli until tender. Set aside. In a large frying pan, (a wok if you have one) melt the butter and add chicken. When the chicken is about half cooked add the peppers and onions. Add water, bullion cubes, and sprinkle soy sauce to taste (about 1/2 cup). When the onions and peppers start to become tender add the carrots. When the carrots are tender add the bean sprouts. Continue cooking until everything is tender and blended well. Add the broccoli.
Separate cauliflower from the head and in a separate pan boil until slightly tender(Not mushy). Drain water and place on a plate. Mash lightly with fork until it resembles a rice texture. Pour stir-fry mixture over the top. Add soy sauce to taste.

My family and I tryed this recipe and it was absolutely delicious...whoever came up with this idea I say thankkkkkk youuuuuuuuu.....
