I've been low carbing for some time (years) but this last year I was diagnosed with rheumatoid arthritis and found that protein foods are a HUGE factor in causing pain and inflammation for me. I feel so much better on vegetarian it's unbelievable however, I'm gaining a ton of weight. I could use any ideas, suggestions, etc. I'm glad to find others here!! Ann

Ann, There are MANY low-carb vegetarians out there. I have a few helpful articles in the Articles section, and there are MANY books available on the subject here.

There are lots of vege proteins you can try. TVP, soy fake Meats, soy cheeses or Almond Cheese, Peanut Butter, tofu, Tempeh, Nuts and seeds, low sugar fruits a ton of low carb veggies, veggie cold cuts, hotdogs, and even Kielbasa Sausage made by Tofurkey. Alot of Quorn products are low carb. Soy milk and yogurts. I make my own Kefer. I got fake ground beef at the store today. There are low carb Tortilla wraps, I make my own baked goods I got a low carb mix for flour from the internet. You are only limited by your imagination. Cauliflower is an awesome substitue for mashed potatoes or rice. And I use Zuccini for noodles, and I make my own spaghetti sauce. There are Breakfast smoothies I make from soymilk and protein powder and peanut butter. Hopefully that will give you a place to start, Good Luck. Judy H
