(This can be made a couple of different ways depending on your taste. The original recipe called for 1 medium onion and included only cauliflower. In mine, I left out the onion and added broccoli. This reminds me of the taste of my grandmothers potato soup (only it wasn't soupy..lol). Very rich and creamy. If you don't have alot of time, throw all the ingredients in a crock pot and just let it cook slow.)
Ingredients:
4 oz. each Broccoli and Cauliflower (I used frozen)
1/2 cup Heavy cream or whipping cream
4 oz. Cream cheese (I didn't soften mine first, but I did cut it into small square chunks.)
1 cup Sour cream
10 slices bacon (I used microwaveable bacon. You can use Bacon Bits, but be sure to look at the carb count)
3 slices American cheese
Put broccoli and cauliflower in casserole dish. Add remaining ingredients, top with cheese. Cover with aluminum foil and bake for about 30 minutes. Remove from oven and stir all ingredients together. Re-cover and place back in oven until hot.
Total Net Carbs: 30-34*
(*The cream cheese I use has " <1 " carb per serving. Just to be safe, I always count it as " 1 " )
