My hubby and I do alot of camping. I'm in desperate need of some recipies that will hold up to traveling or can be made on site. I've been low-carbing for a few months now and the thought of potato salad and macaroni salad are very tempting!!! I'm thankful for any ideas you can throw my way!

Maggie, I always "made my own" camping foods, so transitioning to low carb camping was pretty easy. If you car or RV camp (so you've got some refrigeration) then include things like some fresh veggies, eggs and cheese. If you carry it all on your back, check out your grocery store for things you can repack and prepare on trail with minimal fuss. Besides commercial snacks like any kind of jerky, nut seed mixes and Just the Cheese snacks, some things to consider:
--a LOT of vegetarian options are pretty low carb. Look for ethnic foods like saag paneer (curried spinach and fried cheese) in boiling bag type pouches, CarbTastic soups and entrees that can be repacked into lighter containers for the trail, falafel mix (makes easy middle-eastern chickpea fritters or pancakes on the trail), etc. --make up things like almond flour pancake mix at home, using almond flour, Just the Eggs dried eggs, baking soda, and dried milk, and then just reconstitute and cook on the trail. --make things like the walnet-cheddar journeycakes in "Simple Foods for the Pack" by Sierra Club Books for portable protein-filled low carb trail munchies.
Check out these supermarket staples that work on the trail: --tuna or salmon in foil packets --powdered milk, cream, buttermilk, eggs, egg whites --vanilla protein powder (mix with water and something fruity like Crystal light drink mix, for a quick trail protein boost) --protein bars --wheat or oat bran mixed with protein powder and dried fruit for a hot trail breakfast --hard cheeses like parmesan --pappadums (lentil flatbreads usually around 3g ECC each) --summer sausages or pepperoni that don't need refrigeration; pre-cooked bacon; smoked salmon; dried beef --dried soup mixes --small shapes of low carb pasta (orzo, broken up spaghetti, small shells) which you can mix with dried grated cheese and butter for trail-worthy mac 'n cheese.

Hi, my hubby and myself camp quite a bit also. One of my favorite camping food is beef shish ka bobs. Just bring the vegies all ready cut up, and skewer when ready to eat or skewer at home. We really like peppery stuff and I purchased a Black peppercorn marinade by McCormicks that was to die for. Or marinate in Low Carb Italian dressing is also good. We also do pork tenderloins which are awesome. Also, if you like spicy foods, McCormick also makes a great marinade,"Southwest" which is out of this world on chicken. Marinades are the way to go! Another idea, did you hear of beer can chicken? That too is great. I also made my own low carb pasta salad-low carb pasta, cheese chunks, red pepper, pepperoni and italian dressing. Tastes just like the regular stuff!!! Enjoy!
