I've just been diagnosed as having PCOS and insulin resistance, and in reading up on these conditions, I've found a lot of recommendations for the low carb diet as a way for PCOS sufferers to lose weight and control their symptoms. Problem is, I'm a vegetarian (no meat or fish, but I eat dairy products) and the low carb diets all seem to include a lot of meat. At the moment I eat a lot of carbs like fruit and pasta, and I'm not sure what I could replace them with if I cut out carbs, and whether I could get enough protein without eating meat. Are there any veggie low-carbers out there, or does anyone know any books of low carb veggie recipes? Help!!!

There are a few veggie low-carbers around, but the diet becomes extremely boring for them because of the lack of variety.
Since you do eat eggs, there are probably a lot of recipes for you. Also, if you do the tofu thing, or like soy products, there are TONS of recipes and other low-carb food products available online. But I do warn you, since a lot of veggies have a high carb count (such as carrots, corn, onions, etc,) your prospects there are rather limited.
There are some soy pastas out there.... the only one I personally like is the Proslim Tagliatelle. It's generally an egg noodle style product and it tastes pretty good. But be warned - the fake stuff is VERY expensive.
As far as protein consumption, most of the soy products are high-protein. But if you're generally eating only veggies, then your intake will be too low for this to work. Protein and fat will now be your only energy sources and you'll need much more than you would need to give the same amount of energy from carbs.

Hi Starr, I just found this website while I was browsing the net, so I decided to join. If you are not sensitive to wheat gluten, there are soy hot dogs and veggie lunch meat out there, They all have a couple carbs per serving. Theres soy cheeses that aren't too bad, my problem is that I'm allergic to wheat, and it triggers carb binges for me. I was eating LF/HC for 20 years and gained an enormous amount of weight for my trouble. I am still petrified of meat and fat but am getting better. Macadamia nuts only have 3 carbs per ounce, and soy silk has a heavy creamer out that is only a couple carbs an ounce but Tiffany is right you are really limiting yourself. So for me it was easier to lighten up and I eat chicken and fish. Good luck and let us know how you are doing. Judy
